Finnish Pancakes

I poached this recipe from Omnomicon a while ago and have made it a few times since. It's really easy and quick as well (bonus!), especially if you're like me and not too keen on cooking up a storm early in the morning. This would be just as good as a dessert - it actually reminds me a of a crustless milktart (South African recipe) that my mom used to make. I serve mine sprinkled liberally with cinnamon and drenched in syrup. As we would say in Afrikaans, it's 'lipleklekker' (lip-lickingly-lovely).


3 tbsp butter, melted
4 eggs
2 c milk
1/2 c flour
2 tbsp sugar
1/2 tsp salt
1. Preheat oven to 180C.
2. Put butter into an ovenproof dish (similar to one you would use for lasagne) and place in the oven for a few minutes to melt.
3. Meanwhile, beat eggs until foamy. Add milk, flour, sugar and salt and mix well (there should be no lumps).
4. Carefully pour into dish on top of the melted butter (the butter will mingle a bit with the batter) and bake for 20 - 23 minutes.
Notes:
a) This rises up sky-high while in the oven, but quickly deflates after you take it out - this is normal and to be expected.
d) This recipe from Love and Olive Oil looks very similar, but is made by placing apple slices sauteed in butter in the bottom of the oven dish, instead of the butter. I'm very keen to give that a whirl as well.
